    2 Shots Milk

    This is our favorite item at CSA. Thankfully Randymon provided the recipe !!

    Oven Baked Crab & Parmesan Dip


    1 cup crab meat (freshly picked if possible; well drained if using tinned)

    1 cup cream cheese
    1 cup heavy cream
    3 tbsp mayonnaise
    3 tbsp chopped scallion
    2 tbsp chopped herbs such as dill or parsley
    juice of 1 lime
    salt & black pepper
    scotch bonnet pepper or hot pepper sauce (optional)

    freshly grated parmesan cheese


    X In a food processor blend the cream cheese with heavy cream and mayonnaise until smooth. If mixture is too thick, add little milk. Texture should be like a spread / dip.
    X Add chopped scallion and herbs, lime juice, salt & black pepper to taste.
    X Remove from blender and transfer to a bowl.
    X Fold in crab meat. Check seasoning and if necessary add extra lime, salt and/or pepper. If you like the dip slightly spicy, add hot pepper at this stage.
    X Transfer mixture into a shallow oven proof dish.
    X Sprinkle with a generous amount of freshly grated Parmesan cheese.
    X Place in a very hot oven or under the overhead broiler and bake until dip is hot and the top is golden brown.
    X Sprinkle with more chopped herbs or scallion just before serving.
    X Serve with sweet potato chips, breadfruit chips or alternatively bagel chips etc.

    Bottom Note

    X This dip can be used as a base for various different flavors. Omit the crab meat and replace with cooked chopped shrimp, chopped smoked salmon or smoked marlin.

    Default Jamaican Rum Cake Recipe

    Not a traditional Jamaican Rum Cake, but it's very easy and very good. I'm not allowed to participate in company food days any more unless I bring this .

    Jamaican Rum Cake

    1/2 C. chopped pecans
    1 (18.25 oz.) box yellow cake mix
    1 small box instant vanilla pudding
    4 eggs
    1/2 C. vegetable oil
    1/2 C. water
    1/2 C. dark rum

    1 stick (1/2 C.) butter
    1 C. sugar
    1/4 C. water
    1/4 C. rum

    Preheat oven to 325F. Spray a bundt or tube pan with nonstick cooking spray. Sprinkle pecans around bottom of pan.

    Place cake mix, pudding, eggs, oil, water and rum in a large bowl. Beat with an electric mixer for 2 minutes. Pour in prepared pan and bake for 1 hour.

    While cake is baking, prepare glaze. Combine all glaze ingredients except rum in a saucepan and bring to a boil for 1 minute. Remove from the heat and add the rum. When the cake is done, remove from the oven and pierce thoroughly with a toothpick. Immediately pour glaze over the top. Cool completely before removing the cake from the pan.

    I have substituted rum for the water in the cake batter for a little more rum "kick". I have also substituted coconut water for the water in both the cake and glaze. I have also used a turkey baster with infuser to inject the cake with some of the glaze. I usually make a little extra glaze when I do this.

    Recipe for Jamaican Rum Punch:-

    1 of sour (lime juice)
    2 of sweet (strawberry flavoured syrup)
    2 of strong (rum)
    4 of weak (water)

    Kid Friendly Recipe

    Island Chicken and Rice
    Prep Time: 15 minutes
    Cook Time: 1 hour 5 minutes
    Stand: 5 minutes
    Yield: Makes 6 servings

    4 1/2 pounds chicken pieces
    1 1/2 teaspoons salt, divided
    3/4 teaspoon pepper, divided
    1 tablespoon vegetable oil
    1 tablespoon butter or margarine
    1 small onion, chopped
    1 cup uncooked long-grain rice
    2 garlic cloves, pressed
    1 (14-ounce) can chicken broth
    1 (13.5-ounce) can coconut milk
    3/4 cup unsweetened pineapple juice
    1/4 teaspoon dried crushed red pepper
    4 green onions, chopped
    1 (3.5-ounce) jar macadamia nuts, toasted and chopped
    Garnish: fresh pineapple

    Sprinkle 4 1/2 pounds chicken pieces evenly with 1 teaspoon salt and 1/2 teaspoon pepper.

    Brown chicken in hot oil in a large skillet over medium-high heat 8 to 10 minutes on each side. Remove chicken from skillet, and drain, reserving 1 tablespoon drippings in skillet.

    Add butter to skillet, and melt, stirring to loosen particles from bottom of skillet; add chopped onion, and saut 4 minutes. Add long-grain rice, and saut 4 minutes; add garlic, and saut 1 minute. Stir in chicken broth and next 3 ingredients; return chicken to skillet. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper; bring to a boil. Cover, reduce heat to low, and simmer 35 minutes or until rice is tender.

    Uncover, fluff rice with a fork, and let stand 5 minutes before serving. Sprinkle evenly with green onions and nuts. Garnish, if desired.

    Note: We used pick-of-the-chick (3 thighs, 3 breasts, 3 legs) for chicken pieces

    Thank you all for the great drinks, cakes, and kid friendly ideas! Anything with rum creme is amazing. Love that stuff, but tough to find in most small liquor stores. 207 days and counting until the real deal.

    I'll second the crab dip. It is fabulous and easy to make. I just love it and usually double the recipe.
