Staff Spotlight: Shekera Cassie

Hi Couples family,

I know you all love and admire the staff as much as I do, so I am excited to share with you our latest in the "Staff Spotlight Series". Last week we interviewed Miss Shekera Cassie, Pastry Team Leader at Couples Sans Souci. We caught up with her just after she returned to the island from a "Taste of the Caribbean" competition overseas where she won the Bronze Medal in the Pastry Chef Category and Gold Medal as a team award. She is also featured in "Island Flavours for a Cause Magazine" where she won Best Cheesecake Recipe amongst other top chefs of the Caribbean. (Recipe shared post-interview below)

How long have you been employed to Couples Resorts?
Shekera: Nine years six months

What do you like most about your job?
Shekera: What I love most about my job is that each time I see a guest eating my desserts just the joy on their faces makes me happy knowing that I have done my best in preparing something for them that they truly enjoy. Also I love sharing the knowledge I have with others.

How has working for CR impacted your life?
Shekera: Working with CR has impacted by life in such a big way, as in my resume as grown so much since being here. Also when no one else wanted to train me they were willing to train me and for that Iím grateful. Iím truly happy that I came here.

What is your favorite food/dish?
Shekera: I really donít have a favorite food. Once itís looked after properly and it taste great, Iíll eat it.

Is there a particular person who motivates/inspires you at work?
Shekera: I donít have a particular person who motivates or inspires me. Firstly, my son... he motivates me each day, secondly my family, especially my mother who helps keep me sane. Thirdly, I would say manager Mr. Linval Green. He has taught me everything I know about pastry. And lastly, my pastry family - theyíre the best team I could ever work with.

What is your most memorable moment or interaction with a guest?
Shekera: I really donít have one as each moment I spend interacting with a guest is memorable for me.

Describe Couples Resorts in one word...
Shekera: awesome

Greatest achievement to date:
Shekera: My greatest achievement to date is been a proud mom and a role model for others to emulate.

Bitter Chocolate Mousse/Ackee & Passion Jelly/Green banana Praline/raspberry sauce/passion fruit sauce
Bitter Chocolate Mousse
175 grs dark chocolate
300 grs whipped cream
2 sheet gelatin sheets
Melt chocolate.
Bloom gelatin.
Add gelatin to melted chocolate.
Fold in whipped cream.

Ackee & Passion Jelly
252 grs Cooked Ackee
68 grs Granulated sugar
224 grs Passion Puree
2 sheet Gelatin sheets
Warm puree with sugar.
Bloom gelatin sheets.
Add gelatin to puree mix.
Pure puree mix in an eight inch pan.
Sprinkle Ackee on top of puree mixture and set in freezer.

Green Banana Praline
100 grs Banana
50 grs White Chocolate
100 grs Granulated Sugar
300 grs oil
Heat the oil.
Peel and slice bananas.
Fry bananas.
Caramelized sugar.
Chop chocolate.
Add chopped chocolate to caramelized sugar.
Remove fried bananas from oil.
Add fried bananas to chocolate and chocolate
Remove from pan and place on grease paper.

Raspberry Sauce
100 grs frozen raspberry
50 grs Sugar
20 gr water
water Cornstarch
Warm raspberry, sugar and water
Add cornstarch to rasberry mix.

Almond Wafer
100 grs Butter
100 grs Icing Sugar
100 grs Egg White
150 grs flour
1 oz Almond Paste
75 grs Whole Eggs
5 oz Granulated Sugar
Cream butter, almond paste and granulated sugar and icing sugar
Add eggs and egg white
Add flour
