Healthy Jamaican Recipes: Glazed Shrimp Skewers & Plantain over Island Garden Greens

Mango glazed Sugarcane Shrimp Skewers & Grilled Plantain over Island Garden Greens with Warm Ginger Scallion Vinaigrette

2 Portions

12 each Shrimps - peeled and de-veined
1 tbsp ginger - finely chopped
1 teaspoon garlic - finely chopped
small bunch of scallion - chopped
Juice of 1 lime
3 tbsp olive oil
salt and freshly ground black pepper
1/4 cup freshly squeezed orange juice
1 plantain
1 medium size mango - peeled, cut into 1/2 inch dice
2 cups mixed garden greens
sliced radishes, sprouts, peppers etc

Marinate shrimp in ginger, garlic, scallion, lime juice and olive oil for 30 minutes. Remove from marinade and skewer onto 4 sugarcane or bamboo skewers. Season with salt and black pepper. Heat a heavy frying pan until very hot. Sear shrimp skewers for 2 minutes on each side. Remove, reduce heat and add remaining marinade together with 1/4 cup orange juice. Reduce liquid by half and adjust seasoning with extra lime juice and salt and freshly ground black pepper. Add diced mangos and put back on heat for 30 seconds. Keep aside.

Peel Plantain, slice and brush with olive oil. Grill until golden brown and caramelized.

Arrange warm shrimp skewers and plantain in a salad bowl. Top with salad greens, radishes, sliced peppers, extra chopped scallion and any other salad topping you might like. Dress with warm mango vinaigrette.
